Cellulase is a group of enzymes refined and extracted from selected Trichoderma via submerged fermentation, followed by microfiltration, ultrafiltration, and vacuum freeze-drying. It is mainly used to degrade cellulose into glucose, and to break down plant cell walls in fruit and vegetable juice processing to improve juice yield. It is easily soluble in water, and its aqueous solution is a clear light brown liquid.

Cellulase mainly consists of exo-β-glucanase, endo-β-glucanase, β-glucosidase, and highly active xylanase. Its mechanism of action is to act on β-1,4 bonds inside the molecule to degrade cellulose, generate cellobiose from the β-1,4 bonds at the non-reducing end of cellodextrin, and then hydrolyze it into glucose.

1	Plant Extraction	Cellulase decomposes plant cell walls to dissolve intracellular substances, so it can be used in plant extraction processing. When applied to fruit and vegetable juice processing, it improves juice yield and clarity; when used to extract active plant components, enzyme-based extraction has advantages such as low temperature, high efficiency, and no pollution compared with traditional methods.
2	Juice Processing	The current juice processing industry faces problems such as low pulp juice yield, long processing time, turbid juice, high viscosity, and easy sedimentation. Cellulase can break down plant cell walls to increase juice extraction speed and yield, while also clarifying turbid juice.
3	Herb Extraction	Cellulase gently decomposes the cell walls of various plants to release intracellular substances, thereby promoting the extraction, separation, and purification of active ingredients. Compared with traditional high-temperature and high-pressure methods, it reduces damage to active ingredients and shortens extraction time.
4	Soy Sauce Brewing	Adding cellulase during soy sauce brewing softens, swells, and breaks down the cell walls of soybean raw materials, releasing proteins and carbohydrates enclosed in cells. This not only increases soy sauce concentration and improves quality, but also shortens the production cycle and boosts productivity.
5	Brewing Industry	Adding cellulase during alcohol fermentation significantly increases alcohol yield and raw material utilization, reduces solution viscosity, and shortens fermentation time. By decomposing plant cell walls, cellulase produces glucose for yeast utilization, while also facilitating starch release and utilization, which improves alcohol yield and reduces impurities in the final product.
6	Feed Processing	Common livestock and poultry feeds (e.g., grains, beans, wheat, and processing by-products) contain large amounts of cellulose. Except for ruminants, which can utilize part of it via rumen microorganisms, monogastric animals (e.g., pigs, chickens) cannot utilize cellulose. Adding cellulase to feed effectively improves feed nutritional value and promotes livestock and poultry weight gain.
